Carrot Cake
Ingredients
- 2 eggs
- 1 cup castor sugar
- ¾ cup vegetable oil
- ½ teaspoon vanilla
- 1 cup plain flour
- 1 teaspoon bi-carb soda
- ½ teaspoon mixed spice
- ½ teaspoon nutmeg
- ½ teaspoon cinnamon
- 1 ½ medium carrots Grated
- 1 cup chopped walnuts
- 3/4 cup shredded coconut
Instructions
Procedure
- Mix together first 4 ingredients untilcreamys.
- Sift dry ingredients and add to bowl,gently mix through then add the remaining ingredients.
- Mix until combined
- Place in an 8” lined cake pan
- Bake at 160° in a fanforced oven or 175° not fan forced for 45 to 50 minute
Cream cheese filling
- 125gr cream cheese
- 50gr butter
- 3 cups icing sugar
- 1 teaspoon finely grated orange rind
- 1 tablespoon fresh orange juice
Method
- Place all ingredients in a mixing bowl and beat until creamy
