Shortbread Biscuits
This makes quite a lot Recipe can be halved
Ingredients
- 500gr unsalted butter
- (250gr) 1 ¼ cups caster sugar
- 1 teaspoon vanilla essence
- (125gr) ½ cup rice flour
- (650gr) 4 ¼ cups plain flour
- 1 teaspoon Cinnamon or mixed spice (optional)
Instructions
- Preheat oven to (160°C)
- Beat butter, vanilla and sugar together until light and fluffy.
- Sift together flour and spices, add to butter mixture and mix together until just combined.
- Roll out pastry to ½ cm thickness and cutout shapes using the desired cutters.
- Place onto a lined baking tray, caster sugar can be sprinkled over at this point but if icing is required leave plain, bake for 30 minutes until a pale golden colour.
- Suitable for fondant iced or royal iced cookies.
