This makes quite a lot Recipe can be halved

Ingredients
  

  • 500gr unsalted butter
  • (250gr) 1 ¼ cups caster sugar
  • 1 teaspoon vanilla essence
  • (125gr) ½ cup rice flour
  • (650gr) 4 ¼ cups plain flour
  • 1 teaspoon Cinnamon or mixed spice (optional)

Instructions
 

  • Preheat oven to (160°C)
  • Beat butter, vanilla and sugar together until light and fluffy.
  • Sift together flour and spices, add to butter mixture and mix together until just combined.
  • Roll out pastry to ½ cm thickness and cutout shapes using the desired cutters.
  • Place onto a lined baking tray, caster sugar can be sprinkled over at this point but if icing is required leave plain,  bake for 30 minutes until a pale golden colour.
  • Suitable for fondant iced  or royal iced cookies.
